Abstract
"Chlorogenic acids (CGA) are derivatives of cinnamic acids which have
biological effects often associated with their antioxidant, antibacterial and
anti-inflammatory activities, and number of health benefits have been
associated with CGA uses, such as reduction of the increased risk of
cardiovascular, type 2 diabetes, and Alzheimer's diseases. There are
nevertheless data on human bioavailability of CGA from green coffee
which contains one of the largest CGA concentrations and some of those
are converted into chlorogenic acid lactones (CGL) when roasting
coffee."
